We started with Dalmatian prosciutto and mini burrata, a simple but strong opening that brought together Croatian produce and a softer, more generous first course.

The main dish was octopus ragù with creamy polenta, served with Swiss chard potatoes. It was recommended by our waiter, and it made sense as soon as it arrived: deeper and more comforting than a straightforward grilled fish order, with the octopus giving the dish weight and the polenta making it feel warm and substantial.

For dessert, we had carrot cake and chocolate mousse. The mousse came with a small detail from the waiter: the restaurant had adjusted it to be softer inside after feedback from regular guests. It was a small note, but it said something about the way Proto listens to the people who return.

Seafood and tradition

Proto’s strongest identity is its connection to Dubrovnik seafood culture.

Our waiter added useful context without making the meal feel overexplained, from recommending the octopus ragù to sharing the small story behind the chocolate mousse. Those details made the dinner feel more personal and connected to the restaurant’s regular rhythm.

The team handled the meal with confidence, and the pacing felt suited to a longer Old City dinner. It was polished without becoming cold.
